Cold summer soups are delicious, refreshing and rich in vitamins and antioxidants. According to nutritionist Kristina Plotnikova, some cold summer soups are not only refreshing but also good for health.

Tarator

Plotnikova recommended that in the summer we eat the Bulgarian yoghurt-based tarator soup. According to her, it is useful for the gastrointestinal tract due to the presence of lacto- and bifidobacteria, which help to normalize the microflora in the intestines and support digestion.

Cold beetroot soup

According to the nutritionist, beetroot soup, thanks to its main ingredient - beetroot, has many health benefits. Beetroot contains vitamins B, A, C, E, PP, pectin, choline, potassium, magnesium, calcium, zinc, iron, phosphorus, iodine, folic acid and a sufficient amount of fibre.

Beetroot quickly improves bowel function, has a mild laxative effect, helps with anaemia, and iodine deficiency and reduces stress. Also, the soup contains antioxidants, helps fight aging, cleans blood vessels and protects the body from colds.

Gazpacho

According to Plotnikova, the Spanish gazpacho soup, made from fresh tomatoes and vegetables, not only provides great satiety and refreshment but also contains vitamins A, C and E, which help the body fight colds and viruses. This tomato soup is also a source of antioxidants, prevents cell ageing and has a beneficial effect on the cardiovascular system.

Avocado, spinach and herb cream soup

The nutritionist recommends preparing a soup of avocado, spinach and greens, rich in useful fats, vitamins A, C, E, PP, and K, containing potassium, sodium, magnesium, iodine, iron, manganese, as well as vegetable proteins, carbohydrates and lots of fibre.
